DECAF Mexico Cristal - Regional Select - Water Process

Impressions: Sweet, smooth, juicy.

Earthy fragrance of browning wood, Swiss chocolate and peanut butter meld with candied nut and caramel when brewed. Flavors carry into the cup, with roasted hazelnut emerging as the cup cools. The brew is sweet, buttery smooth and juicy with melon-like acidity and a pleasant finish. Unbelievably, it's decaffeinated.

ABOUT THIS COFFEE:

Our water-processed decafs are processed in a facility in Mexico called Descamex. In order to remove the caffeine in this process, green coffee is soaked in hot water, extracting both the caffeine as well as other solubles in the coffee (flavor compounds, for instance). This water solution is then run through a special filter that strains the caffeine molecules from the water, leaving just the flavor compounds behind. The green coffee is then soaked in the solution and through osmosis the flavor compounds are reabsorbed. The coffee is then dried once more, and prepared for reexport.
