Sour coffee is the most common brewing complaint there is, and it is almost never the beans. It is a signal, and a specific one. Sourness tells you the water finished its work before the coffee finished giving up what it had.
The fix is usually one adjustment, sometimes two. This guide covers what sourness actually is, the five things that cause it, and the order to work through them so you are not guessing.
Sour Is Not the Same as Acidic
Worth settling first, because the two get confused constantly and they call for opposite responses.
Acidity in specialty coffee is a quality. It reads as bright, sweet, and fruit-like: citrus in a washed Ethiopian, apple or stone fruit in a Kenyan, a clean snap in a high-grown Colombian. Acidity has sweetness underneath it and a finish that resolves. It is one of the things that separates exceptional coffee from commodity coffee.
Sourness is a defect. It reads as sharp, thin, and unfinished. There is nothing underneath it. The cup tastes like it started and then stopped, because that is precisely what happened during brewing.
A useful test: if the cup is bright but you want to keep drinking it, that is acidity. If the cup makes you set it down, that is sourness. One is a feature of the coffee. The other is a brewing problem you can fix in about five minutes.
What Causes Sourness: Under-Extraction
Coffee compounds do not dissolve all at once during brewing. They come out in sequence. Fruity acids extract first. Sweetness and body compounds follow. Bitter and drying compounds come last.
Under-extraction means the brew stopped early in that sequence. The acids made it into the cup. The sweetness and body that would have balanced them did not. That is the whole mechanism, and every fix below is some version of pushing the extraction further along.

Five Causes of Sour Coffee, in the Order to Check Them

1. Water Temperature Too Low
Start here, because temperature is the fastest thing to change and the easiest to reverse. Cooler water extracts more slowly, so at a fixed brew time it simply does not get as far through the sequence.
The right temperature depends on roast level, and this is where most sour-cup problems begin. Light roasts are denser and resist extraction, so they need more heat: 200 to 205°F, and in a French Press, up to 210°F with a longer steep. Medium roasts do well at 195 to 200°F. Dark roasts extract readily and are better at 185 to 195°F.
If you are brewing a light roast at 190°F because that is the number you read somewhere, that alone will produce a sour cup. Raise it five degrees and taste again.
2. Grind Too Coarse
Coarse grounds expose less surface area to the water, which slows extraction. If the brew finishes faster than expected and tastes thin and sharp, grind is the likely cause.
Go one increment finer, not three. Grind adjustments compound quickly, and overshooting into bitterness means starting over from the other direction. Brew, taste, and adjust again if needed.
Grind consistency matters as much as size here. A blade grinder produces particles of wildly different sizes, and those extract at different rates, which puts sour under-extracted coffee and bitter over-extracted coffee in the same cup at once. 3. Brew Time Too Short
Less contact time means less extraction. Each method has a working range: about four minutes for a French Press and five to six for light roasts, roughly two minutes for an AeroPress, about three minutes for a Hario V60 or Kalita Wave, and four to five for a Chemex.
In pour-over brewing, a fast drawdown usually means grind rather than time, since the grind is what controls how long the water takes to pass through. In immersion brewing, where you control the clock directly, extending the steep by 30 to 60 seconds is a clean test.
4. Uneven Saturation
This one gets overlooked. If some grounds never make proper contact with water, they contribute almost nothing to the cup while the rest of the bed carries the whole extraction. The result reads as sour and weak even when grind, temperature, and time are all correct.
Dry clumps in a French Press, a pour-over where water channels down one side of the bed, an AeroPress where the grounds were never stirred: all of these produce the same outcome. Stir after adding water in a French Press or AeroPress. In pour-over, pour in slow controlled circles and give the slurry a gentle swirl after the bloom.
Agitation speeds extraction, so if you add stirring to a routine that was already close, you may need to back off slightly on grind fineness or time.
5. Dose Too Low for the Water
Coffee and water are a ratio, not two separate decisions. Too little coffee for the volume of water produces a cup that is thin and sharp at the same time, because the water over-extracts the small amount of coffee available while still delivering very little dissolved material overall.
The standard starting point is 1:16 by weight, one gram of coffee for every sixteen grams of water. Measure both on a scale. Volume scoops vary enormously depending on grind size, bean density, and how the scoop was filled, and that variation alone can move a recipe far enough to produce sourness.
If you want a smaller cup, scale coffee and water down together. Reducing water while leaving the dose alone changes the ratio and the cup along with it.
Change One Thing at a Time
The reason to work in the order above is that each variable interacts with the others. Change three at once and a better cup teaches you nothing, because you cannot tell which change earned it.
Temperature first, since it is fast and fully reversible. Grind second, one increment. Time third. Saturation and dose after that. Brew and taste between each change. Most sour cups resolve within two adjustments.
When It Actually Is the Coffee
Brewing solves most sourness, but not all of it.
Underdeveloped roasts taste sour no matter what you do, because the roast never carried the beans far enough to build the sugars that balance acidity. No brewing adjustment recovers what was never developed.
Stale coffee is the other case. As coffee ages past its window, the sweetness and aromatic complexity fade first, which leaves the acids more exposed than they were when the coffee was fresh. Green coffee quality sets the ceiling. A roaster working with low-grade beans has limited room to produce a great cup, and no brewing technique closes that gap.

Why does my coffee taste sour?
