Huehuetenango is extremely diverse and known for producing some of the best coffees in Latin America due to its climate, altitude, water sources, and traditional varieties. It is located in Western Guatemala bordering Mexico. Because of that, coffees from Huehuetenango have very similar flavor characteristics to coffees that hail from the Chiapas region of Mexico. Most coffee farmers here are smallholders who are either working independently of one another, loosely associated by proximity and cultural ties, or formally affiliated in cooperative associations. The coffees offered under the banner of "Waykan" are the star coffees of the farmers in the region. In fact, Waykan burlap bags are emblazoned with a large star, which is what Waykan translates to. Each producer brings their coffees to the mill where they are evaluated and grouped according to quality and flavor. The best of these small lots are blended to represent "this is what coffee from here should taste like." Only these are selected for "Waykan."
